Fresh cucumbers, spicy serrano, and nutty peanuts make this a spicy and refreshing salad.
makes 3 cups
2 medium cucumbers, or 1 large cucumber
1 medium radish, sliced thin rounds
1 serrano, minced
1/4 cup roasted peanuts
1/4 cup raw pepitas
Juice of 1 lemon
1/2 teaspoon sea salt
2 tablespoons olive oil
1 teaspoon black mustard seeds
Slice the cucumbers lengthwise in half, and then again lengthwise in half. Cut into quarter moons and set aside in a bowl.
Add radishes, serrano, peanuts, pepitas, lemon juice, and salt. Toss to combine.
Heat the oil and pop the mustard seeds, pour over the salad and toss before serving.
Add sesame seeds in addition to or instead of peanuts.
Dice the cucumbers and the radishes into cubes to create more of a chutney that can be used like a condiment.
