This salad is good on its own and also makes an awesome side dish for grilled or roasted meats.
makes 3 cups
2 heirloom tomatoes, cut into thick slices
1 firm but ripe mango, chopped
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
3 tablespoons mustard oil
1/2 teaspoon coriander seeds
3 tablespoons pistachios, chopped
Few sprigs of cilantro
Lay the tomatoes on a serving platter. Scatter the mango on top. Sprinkle with salt, ground cumin, and chili powder.
Heat the mustard oil and pop the coriander seeds. Drizzle onto the tomatoes and mangoes. Garnish with chopped pistachios and cilantro sprigs..
Add mild cheese like burrata or mozzarella.
Put on top of warm toast as a starter or toss with greens.
