A deliciously quick way to enjoy salmon. This is perfect to marinate the night before and stick in the oven when you get home for dinner.
Makes 8 to 10 pieces
1 pound salmon fillet, skin removed
3 tablespoons olive oil
1 medium red onion, sliced
1 teaspoon minced garlic
1 tablespoon amchur
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon sea salt
2 teaspoons grated jaggery
Preheat oven to 425°F.
Cut the salmon into 2-inch pieces — you should have approximately 8 to 10 pieces of about 2 ounces each.
In a mixing bowl, mix together the olive oil, onion, minced garlic, amchur, cumin, chili, salt, and jaggery. Gently toss the mixture with the salmon pieces.
Let the salmon marinate for 10 to 15 minutes at room temperature or overnight refrigerated. Place cut side up evenly on a sheet pan with parchment paper.
Cook for 5 to 7 minutes until the salmon is done.
Top a salad or bowl of rice.
Try other quick cooking vegetables instead of onions like asparagus or bell peppers.
