This is as simple as a salad goes but it will stay crunchy in the refrigerator for up to 3 to 4 hours.
serves 2 to 3
1 cups brussels sprouts
1 English cucumber
1 ripe mango
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
2 to 3 tablespoons pumpkin seeds
3 tablespoons olive oil
2 tablespoons Saba (like balsamic vinegar)
Trim the brussels, rinse, then slice thinly.
Cut the cucumber in half lengthwise then cut into thin wheels.
Peel and cut the mango into 1/2-inch cubes.
In a large bowl, combine the brussels sprouts, cucumber, mango, salt, pumpkin seeds, olive oil, and saba.
