Chocolate truffles are simply chocolates that have been flavored with different things or combined with nuts. The quality of chocolate is really showcased in a truffle so find the best chocolate you can when making them.
Makes 15 to 20 truffles
3/4 cup (170 grams) heavy cream
1 tablespoon chai masala
Pinch of sea salt
2 cups (340 grams) 85% Valhrona chocolate chunks
1/2 cup cocoa powder for coating
In a small saucepan, combine the heavy cream with the chai masala and bring to a boil. Cool and let it rest for 10 to 12 minutes. Strain.
Over a double boiler, in a large metal (heat-proof) bowl, heat the chocolate with the chai cream. As soon as the chocolate has melted, take it off the heat.
Let the chocolate cool for 20 to 30 minutes or until it has hardened slightly.
Roll into 3/4-inch balls and coat in cocoa powder. Keep refrigerated.
These truffles will keep for two to three months in the refrigerator.
Add two tablespoons of of alcohol of your choice – Irish Baileys or Kahlua work well.
Make hot cocoa with remaining cocoa powder.
