Clove Masala Pilaf

Cloves are a fragrant spice with magical powers. If you eat cloves, they work as a natural mouth freshener and your body will naturally repel mosquitoes!

Step 1
Rinse the basmati rice in cold water 2 to 3 times. Soak for about 1 to 2 hours and drain.
Step 2
In a stockpot over high heat, warm the olive oil and add the cloves. Within 2 to 3 seconds, add the minced onions and fry on high to medium high until golden brown.
Step 3
Add the basmati rice, turmeric, black pepper, cardamom, salt and 2 cups of water. Bring to a boil, then cover and turn the heat down to low.
Step 4
Simmer for 7 to 8 minutes, then turn the heat off. Add the peas. Let the rice rest for 5 to 7 minutes. The peas will finish cooking in this time. Fluff the rice and serve.

1 cup long-grain basmati rice

2 to 3 tablespoons ghee or olive oil

1 teaspoon cloves, crushed

1/2 cup minced onions

1/2 teaspoon turmeric

1/2 teaspoon freshly ground black pepper 

1/4 teaspoon cardamom

1 teaspoon sea salt

1 cup peas, fresh or frozen

Notes & Variations

  • True basmati rice with a depth of flavor and complexity comes from India — there are plenty of imposter brands, so beware.
  • Instead of peas, add minced spinach or celery.
