Cloves are a fragrant spice with magical powers. If you eat cloves, they work as a natural mouth freshener and your body will naturally repel mosquitoes!
Serves 4
1 cup long-grain basmati rice
1 1/2 cup water
2 to 3 tablespoons ghee or olive oil
1 teaspoon sea salt
Clove Masala (recipe below)
Clove Masala_
1/2 teaspoon cloves
1 each mace flower
1/2 teaspoon freshly ground black pepper
1/4 teaspoon cardamom
RICE: Rinse the basmati rice in cold water 2 to 3 times. Soak for about 1 to 2 hours and drain.
In a stockpot combine the basmati rice, ghee or oil, clove masala, and salt. Bring to a boil, then cover and turn the heat down to low.
Simmer for 7 to 8 minutes, then turn the heat off. Let the rice rest for 5 to 7 minutes and fluff just before serving.
CLOVE MASALA: Roast in a 300°F oven for 3 to 4 minutes or over a skillet in stovetop. Be careful not to over-cook or the spices will lose their fragrance.
True basmati rice with a depth of flavor and complexity comes from India — there are plenty of imposter brands, so beware.
Feel free to mix in a vegetable of your choice!
