Spring Healing Teas

For Houstonians, signs of summer are here — baseball season has begun, the sporadic rain and the humidity along with it. Each of us prepares for the seasons differently. Those of us who practice Ayurveda, the sister science of yoga, do away with the cold, heavy emotions of winter and embrace the new fire of spring and summer by eating and drinking foods that bring some heat into our body. Starting the day right is paramount to balancing the daily cycle — that means a tea that lights a warm, cleansing sensation. Making teas with a combination of herbs, roots and spices opens up a world of possibilities. During my daily rituals and trials at my restaurant and at home, I find these infusions bring balance no matter what my state may be.

Step 1
Place ingredients in a kettle or press pot and pour in roughly 6 cups of boiling water. Let the tea steep for 20 to 25 minutes. Enjoy.

Spring Healing Tea:

Few sprigs of fresh mint

4 to 5 green cardamom pods

8 to 10 whole black peppercorns

2 to 3 unpeeled ginger slices

Few threads of saffron

Cleansing Tea:

Few sprigs of fresh oregano

1 teaspoon whole coriander seeds

1 teaspoon fennel seeds

2 to 3 fresh unpeeled turmeric slices

Balancing Tea:

Few basil leaves

2 to 3 unpeeled ginger slices

1 teaspoon whole cumin seeds

1 small cinnamon stick

Notes & Variations

  • Having multiple infusions allows you to mix and match personal tastes.
  • The infusions can turn a touch bitter if steeped for a long time.
  • If you are OK with the bitter (like I am), pour more hot water over the mixture 2 to 3 times over.
