These onions can stay in the refrigerator for up to 3 months - the beets are in the brine to add bright color. The onions are good for topping off sandwiches and salads.
Makes 2 1/2 cups
2 cups sliced red onions
2 to 3 whole star anise
5 to 6 whole red chiles
2 to 3 large sticks of cinnamon
1 small beet, unpeeled and sliced
1/4 cup white vinegar
1 1/2 cups water
1/2 teaspoon sea salt
Combine all of the above ingredients in a storage container and refrigerate for 2 days. The onions will turn a bright pink and the spices will infuse into the onions.
Pickling onions requires only salt, vinegar, water, and a vegetable. Keep it as simple as that or spice it up.
