Basmati rice, a long grain rice grown in Northern India, is aged for 2 to 3 years to develop flavor. We like to serve this rice with an intense fragrant curry like the Kerala vegetable stew or a hearty meat stew.
Makes 2 cups
1 cup basmati rice
1 1/2 cups water
Rinse the basmati rice in cold water 2 to 3 times. Soak for about 30 minutes to an hour.
In a medium sized stockpot, combine the rice and water and bring to a boil. Lower the heat, cover and simmer for 8 to 10 minutes or until the rice is dry. Turn the heat off and let the rice rest for 5 to 10 minutes.
Stir it gently with a fork. Top as desired or eat it plain.
