For the flavor of pepper to really stand out it has to be fresh. Buy whole peppercorns & grind them in a spice grinder or blender on high speed.
Makes 3 1/2 cups
1/3 cup freshly ground black pepper
2 cups plain whole-milk yogurt
1/2 cup olive oil
1/2 cup drained ginger purée (or grated ginger)
1 tablespoon sea salt
1/4 cup rosemary, finely chopped
In a bowl, mix all ingredients together.
For a turkey, salt first and bake until it is halfway done. For the last half of the cook time, brush the turkey generously with the marinade (cook uncovered).
For a chicken, put the marinade on at the beginning, since it takes much less time to cook.
Replace black pepper with green or white pepper.
Garnish with pink peppercorns.
