Chicken Chettinad Kebabs

Chettinad is an area in the southern Indian province of Tamil Nadu that is known for its beautiful architecture and cuisine. The local community consists of mostly merchants and traders, doing business with spices, silks, and other local goods. Since pepper and cardamom are native to those regions, they are used profusely in cooking. Here is a simple oven roasted kebab recipe heavy in aromatic black pepper and other warm spices. The kebabs can be eaten as an appetizer or as a main course with a simple salad on the side or the more traditional pairing with rice and beans or a vegetable curry. The kebabs can also be re-used the next day in sandwiches or in a stir-fry. They can also be sliced and added to a salad.

Step 1
In a medium sized mixing bowl, combine the chicken, onion and pepper with the yogurt, cardamom, ginger, garlic, olive oil and salt. Marinate for minimum of an hour up to 2-3 days. Soak 8 to 10 10-inch kebab sticks in water.
Step 2
When ready to make the kebabs, preheat the oven to 450F. Skewer the chicken alternating with onions and peppers and lay them on a shallow greased baking pan. Cook in the oven for 10 minutes, then turn the oven off. Let the kebabs rest in the oven for another 10 minutes. Serve with fresh herbs as a garnish and fresh lime slices.
1.5 pounds boneless skinless chicken breast, cut into 1 1/2-inch chunks
1 small red onion, peeled and cut into 1 ½-inch chunks
1 red bell pepper, cut into 1 ½-inch chunks
1/4 cup whole milk Greek style yogurt
2 tablespoons freshly ground black pepper
2 teaspoons ground green cardamom
1/2 teaspoon ground cloves
2 tablespoons ginger puree
2 teaspoons minced garlic
4 tablespoons of olive oil
2 teaspoons sea salt
Herbs for garnish
Fresh lime slices

Notes & Variations

  • Three medium sized chicken breasts roughly amount to 1.5 pounds.
  • The chicken can be marinated and frozen for up to 4 to 6 months.
  • Zucchini or mushrooms can be added to the kebabs.
