1 pound ground chicken breast
1 cup cooked mushrooms, finely chopped
2 tablespoons thick whole-milk yogurt
1 1/2 teaspoon sea salt
1 teaspoon freshly ground black pepper
1 teaspoon chili powder
1 teaspoon ground turmeric
1 tablespoon amchur
1 teaspoon ground cinnamon
2 to 3 stalks green onions, minced
1 cup chopped herbs (such as cilantro, mint, parsley, etc.)
Makes 20-25 small kebabs
Preheat the oven to 400°F. Combine the chicken with mushrooms, yogurt, salt, black pepper, chili powder, turmeric, amchur, cinnamon, green onions, and herbs.
Form little slider like patties (about 2 inches in diameter) and place them on a greased baking sheet.
Place the baking sheet in the oven for 5 to 6 minutes (if using dark meat, cook for 10 to 12 minutes). Take the tray out and let the chicken kebabs rest for a few minutes.
This recipe can be done with other kinds of meat like beef, turkey or lamb.
Instead of mushrooms, use grated raw cauliflower or carrots.
