Your classic raita. This is recipe shows you just how simple a raita can be. Red onion and a vegetable is all it takes. Feel free to make some additions with whatever you have in your fridge.
Makes 3 cups
2 cups plain whole-milk yogurt
1 teaspoon ground cumin
1 teaspoon sea salt
2 medium cucumbers (or 1 large cucumber)
1/2 small red onion, minced
1 green apple, minced
3 teaspoons olive oil
1 teaspoon black mustard seeds
Whisk the yogurt in a large bowl with the salt and cumin. Then fold in the chopped cucumber, onion, and apple.
Heat the oil and pop the mustard seeds. Fold into the raita and refrigerate until ready to serve.
Will keep for 2 to 3 days in the refrigerator. Onions and cucumbers generate a lot of water. If the raita seems watery, simply drain.
Add lemon juice or lemon zest for added brightness.
Substitute the red onion for green onion.
