Delicious & easy to make cauliflower using our coconut masala.
Serves 3 to 4
1/2 head medium cauliflower
1/2 cup coconut masala
2 tablespoons coconut oil
1/2 teaspoon sea salt
Herbs or greens for finish
Juice of half a lime
Preheat the oven to 325°F. Cut the cauliflower into small florets, slicing the green leaves around it. Toss with coconut masala, coconut oil, and salt and spread onto a baking sheet. Cover tightly with foil.
Bake in the oven for 15 minutes, take the foil off and continue baking for another 5 to 10 minutes or until the cauliflower is tender and golden.
Toss with herbs or greens, squeeze lime juice, and serve.
Alternately, sauté the cauliflower with the same ingredients instead of oven roasting it.
To turn this into a curry, add a cup of coconut milk.
To turn this into a salad, add torn lettuce leaves, herbs, sliced tomatoes or nuts.
