Sabzi simply means cooked vegetable – this cauliflower sabzi is punctuated with mustard seeds and amchur, a dry green mango powder that adds a deeply flavorful sour flavor.
serves 2 to 3
3 tablespoons olive oil
1 teaspoon black mustard seeds
1 medium head of cauliflower, cut into smaller florets
1 teaspoon ground turmeric
1 teaspoon sea salt
1 teaspoon red chili powder
2 teaspoons freshly minced ginger
1 tablespoon amchur
3 to 4 stalks green onions
In a large frying pan over high heat, warm the olive oil and pop the mustard seeds. Add the cauliflower florets and cook on high heat for 3 to 4 minutes. Add turmeric and salt, cover, and simmer for 5 to 8 minutes or until the cauliflower has wilted and is cooked through. Add the chili powder and turn the heat off. Add the ginger, amchur, and green onion. Let the mixture rest for 5 to 10 minutes before serving.
